recipes : Albondigas Soup
Rice and bite-sized meatballs made with pork and beef in a beef broth
seasoned with green chili salsa, tomatoes and onion in this hearty Mexican soup
that is great for a crowd.
INGREDIENTS – All ingredients can be found at Rancho San
Miguel Markets
Soup:
6 (14 oz.) cans of beef broth
1 (8oz.) jar of salsa
1 onion, chopped
2 (14.5 oz.) cans peeled and diced tomatoes
¼ C. chopped fresh basil
½ tsp. dried oregano
¼ tsp. ground black pepper
Meatballs:
1 lb. lean ground beef
¼ lb. pork sausage
1 onion, copped
1 egg, beaten
½ tsp. salt
¼ tsp. ground black pepper
¼ tsp. garlic powder
¼ C. milk
½ tsp. dried basil
½ C. cornmeal
½ C. white rice
DIRECTIONS
- Mix together beef broth, salsa, 1 chopped onion, tomatoes, dried basil,
oregano and ½ tsp. pepper.
- Bring to a boil and simmer 20 minutes
- Combine ground beef, sausage, the other chopped onion, egg, salt, ¼ tsp.
pepper, garlic powder, milk, basil and cornmeal. Mix well. Form
into tiny, bite-sized meatballs.
- Add meatballs and rice to broth. Cover and simmer very slowly for
1 to 1 ½ hours.
